This simple, super fresh and
This simple, super fresh and very fruity peach and cream cake is quick to bake and perfect for your spring and summer coffee table!
It consists of a simple sponge cake base (alternatively you can of course also use my biscuit) and a wonderful, lemony-fresh creamy yoghurt cream with peaches. Then on top the sunny mirror of peaches and lemon juice - not only an eye-catcher, but also a very round and super refreshing composition in terms of taste!

Peach yoghurt cream cake
Ingredients for a 26 cm springform pan:
Floor:
100 g soft butter
100 grams of sugar
1 packet of vanilla sugar
3 eggs (size M and room temperature)
100 grams of flour
1 teaspoon Baking powder
15 g cornstarch (simply replace with baking cocoa for a dark base)
For the yoghurt cream:
9 sheets of gelatin
400 grams of whipped cream
500g Greek yoghurt
1 packet of vanilla sugar
150 grams of sugar
140 ml lemon juice
grated zest of one lemon
1 large can of peaches, half of the peaches in pieces or slices (reserve the juice!)
For the peach-lemon mirror:
the other half of the peaches
50 ml lemon juice
350ml peach juice (use the reserved liquid from the can)
50 g powdered sugar
4 sheets of gelatin
Optional decoration with dots of cream and peach slices or chocolate hearts
