Why do darktable colours look like sh*t ? (And other colour appearance matters)

Many users don't understand why they don't get the same colours out of darktable than out of the JPEG their camera bakes. There is some important talk we need to have about what the camera does, why, and what darktable does and why. Also, we need to reset user expectations regarding "good looking" colours and how they are achieved, with respect to colour memory and colour perception.
