The Ingredients

1/2 cup oil
1 cup onion
Whole spices 2-3   dry lemon , 6-8 cloves, 4-5 cardamom,  2-3 bay leaf, 5-8 Black pepper and a stick of cinnamon
2 cloves garlic, sliced
Chicken pieces of your choice or one chicken cut into small pieces
2 tablespoons kabsa spices, or to taste (available at Arabic stores)
Sweet and spicy pepper to taste
2 cubed potatoes (optional)
1 cup tomato cubes
1/2 cup of tomato sauce
Salt, to taste
2 cups hot water (1 cup of water per cup of rice)
2 cups of washed basmati rice only
