Caramel Popcorn (Copycat Garrett’s Caramel Crisp, American Favorite)

UPDATE:
Two subscribers complained about the caramel coating recrystallizing. Best way to prevent this from happening is to add 2 tbsp of corn syrup (in place of the baking soda). I have tested this and it works better.
The reason I did not include the corn syrup is because it has high fructose & not that good for you. But the sugar is not any better. So, the key is moderation. When I make this recipe I mix the caramel coated popcorn with plain popcorn. Somehow it makes it even better!

UPDATED INGREDIENTS:  
1.  5 cups (235 ml. each) popped popcorn
2.  175 gr. (3/4 cup, packed) light granulated brown sugar
3. 30 ml. (2 tbsp.) water
4.  70 gr. (2.5 oz.) butter
5.  5 ml. (1 tsp.) vanilla extract
6.  2.5 ml. (1/2 tsp.) salt
7.  REPLACE (1.25 ml. (1/4 tsp.) baking soda) WITH 2TBSP CORN SYRUP
Notes:  
1. Based on a 235 ml (US cup), 15 ml. tbsp. and 5 ml tsp.
2. Use a 50%/50% combination of air popped mushroom popcorn and butterfly popcorn.
