Resetting the entire Illustrator interface can be overkill if trying to retrieve a single panel. The panels can be found and opened via the Window menu.

A Workspace is just a name given to a particular collection of panels laid out in a particular way. Illustrator comes with several workspaces, the default of which is Essentials. Additional workspaces can be easily created by the user. These can all be accessed via the Workspace section of the Window menu. To reset the active workspace, choose Reset [workspace name]. Illustrator should now look the way it did when it was first installed.
