गुरमय रोटी बनवण्यासाठी लागणारे साहित्य
कणकेसाठी
• २ कप गव्हाचं पीठ
• चवीनुसार मीठ
• १ चमचा साजूक तूप
• पाणी
मसाल्यासाठी
• १ चमचा सुंठ
• १ चमचा दालचिनी
• १/२ जायफळ
• १ चमचा काळी मिरी
• १ चमचा लवंग
• १ चमचा हिरव्या वेलचीच्या बिया
• २ मसाला वेलची
• १ चमचा गाठी पिंपळी
• १ चमचा लेंडी पिंपळी
सारणासाठी
• १ १/२ कप पितांबरी रुचियाना गूळ पावडर
• १ १/२ चमचा गुरमय रोटी मसाला
• १ चमचा साजूक तूप

Gurmai roti is a Khnadesh special recipe. This is specially made in winter. You can call this as another version of gul poli. It turns out nice and crispy. A special masala is used in this recipe. We will be making that special masala too. You don’t need to grate the gudh for making this roti. You will get an idea for that too. You can try this recipe at home and drop a comment for me. Ingredients:
For Dough
• 2 cups Wheat flour
• Salt to taste
• 1 tsp Ghee
• Water
For Masala
• 1 tsp Dry Ginger
• 1 tsp Cinnamon
• 1/2 Nutmeg
• 1 tsp Black peppercorns
• 1 tsp Cloves
• 1 tsp Green cardamom seeds
• 2 black Cardamom
• 1 tsp Gathi pimpli
• 1 tsp Lendi pimpli
For Stuffing
• 1 1/2 cup Pitambari Ruchiyana Jaggery powder
• 1 1/2 tsp Gurmai roti masala
• 1 tsp Ghee
For Gurmay Roti
• Ghee

Method:
For Dough
• Take wheat flour, salt, ghee in a dish and mix everything well together.
• Add a little water at a time and knead a little soft dough like chapatti dough.
• Cover and rest the dough for about 30 minutes.
For Masala
• Pound dry ginger a little and transfer it into a blender jar.
• Add cinnamon, nutmeg, black peppercorns, cloves, green cardamom seeds, black cardamom,
 gathi pimpli, lendi pimpli and blend everything into powder.
• Koranjan, sadhi pimpli is also used in this masala.
• You can store this masala and use while making tea or masala dudh too.
• Strain the powder and gurmai roti special masala is ready.
For Stuffing
• Take Pitambari Ruchiyana Jaggery powder in a dish and add 1 1/2 tsp gurmai roti masala,
  ghee.
• Mix everything well together and blend it well once.
• Transfer the stuffing into a dish and roll ladoos from it.
• You can make around 6 ladoos from this mixture.
For Gurmay roti
• Take the dough and knead it well once.
• Make small balls from the dough and take one of them.
• Make the dough ball smooth and even and roll it into small disc.
• The disc should be thick at the center.
• Fill the stuffing ball into the disc and seal the edges well.
• Remove the excess dough and pat it well between your palms.
• Avoid using dry flour while rolling the roti. You can use a little oil if needed.
• Roll the disc into as thin chapatti as possible carefully.
• Heat up a skillet on low to medium heat and transfer the roti on it.
• When lower side is roasted a little flip the roti over and spread ghee on upper side.
• When lower side is roasted well flip the roti over and spread ghee on upper side.
• When the roti is roasted well from both sides take it off on a cooling rack.
• Gurmay roti is all ready.
• Store the roti in an airtight container when it cools down completely.
• It has shelf life of about 8-10 days.
