Quiet evening solo car camping in my Skoda Yeti (simple set up and easy one pot vegan dinner)

Join me for a relaxing evening car camping by the sea in Northumberland in my trusty Skoda Yeti! Where I stayed was really just a field for campers with no facilities but I managed to snag a beautiful view even if I was a bit sloping 😅 The sea was only 100m away for a walk, and I cooked a tasty plant based dinner in the evening sun shine. I’ve made quite a few updates to my camping set up so you can check that out, it’s still all very simple but I did change my bed set up! (easy no-build conversion)    • Transforming My Skoda Yeti into a Bud...   #skodayeti #carcamping #solotravel Easy vegan camping dinner with protein: Tempeh cubed Spinach Tomatoes diced Avocado (maybe don’t get a unripe one like I did 🫣) Chickpeas and quinoa (precooked from Sainsbury) Tahini (I used to hate tahini until I tried this one so if you want to give it a whirl I recommend this one it’s not bitter and tastes amazing on pretty much everything) amzn.to/3BafZXq Quickly fry the tempeh and tomatoes, add the packet of quinoa/chickpea mix (or packet of precooked lentils would also be great), add spinach until sufficiently hot and wilted, season with salt and pepper! Drizzle with tahini and a squeeze of lemon if you have it. Throw on some chopped avocado. Yum.
