Cheesecake, or rather, New York Cheesecake is one of the best known and loved American desserts in the world.

🍳 INGREDIENTS 🍳
FOR THE BASE
digestive biscuits 250 g
butter 150 g
cinnamon 1 pinch

FOR THE CREAM
Philadelphia (or other quark-like fresh cheese) 600 g
sour cream (or creme fraiche or Greek yogurt) 150 g
4 medium eggs (at room temperature)
granulated sugar 150 g
liquid fresh cream 100 ml
vanilla bean 1

FOR DECORATION
berries 100 g
fresh mint 2 leaves

🍳 PREPARATION 🍳
00:00 - Melt the butter in the microwave or in a saucepan over low heat and then set aside.
00:35 - Finely chop the Digestives by blending them with a robot equipped with blades (cutter), or by placing them in a food bag and pounding them with a meat mauler; pour them into a bowl, add the butter, a pinch of cinnamon, and then mix well.
02:14 - Butter the springform pan, then line the sides with baking paper too. Pour the mixture into the pan and, using the back of a spoon, press the biscuit and butter base into the bottom and sides by at least 4-5 cm. Place the pan in the freezer for at least 15 minutes.
03:58 - Make the cream by placing eggs, sugar and the internal seeds of the vanilla pod in a large bowl. Beat everything with the whisk of an electric mixer until you get a nice swollen and frothy cream (it will take at least 10 minutes). Slowly add the liquid cream, the Philadelphia one spoon at a time and lastly the sour cream (or yogurt). Continue beating until the cream is smooth and free from lumps.
05:50 - Take the base out of the freezer and pour the cream obtained into it, then bake the New York Cheesecake in a preheated static oven at 150° for 60 minutes.
06:56 - Take the cheesecake out of the oven and let it cool down to room temperature in its tin. Don't worry if you still see it shaking, it will settle down as it cools. Then place it in the fridge, still in its mould, covering it with plastic wrap, for at least 3-4 hours before consuming it (it would be better to leave it in the fridge overnight).
08:12 - Once cold, take it out of the mold and garnish it with a fruit coulis or fresh berries and a couple of mint leaves. Your cheesecake is ready!
