Authentic Chapli Kebab At Home | Spring Onion Attock Style

Chapli Kebab is one of the most popular street foods Pakistan. Originating from Peshawar but different regions have their own ways of mixing the ingredients. In this video I will show the Attock Style of the Chapli Kebab.

The video shows a simple step by step guide for the Attock Style Chapli Kebab and also an easy technique for forming patties.

Ingredients for Attock Style Chapli Kebab:
- 3 bunches of spring onions
- 4 tomatoes
- Half a bunch of fresh coriander
- 10 bullet peppers
- 1 Kg of mutton mince meat
- 3 tbsp coriander seeds
- 2 tbsp cumin
- 1 tbsp ajwain (carom seed)
- 1 tbsp dried fenugreek leaf (kasuri meethi)
- 1.5 tbsp dried pomegranate seeds
- 4 tbsp corn flour
- 3 tbsp plain flour
- 2 eggs
- 1 tbsp salt
- Cooking oil

Preparation:
- Mutton meat minced twice and with some fat content
- Using a grinder, lightly grind pomegranate seeds, cumin and coriander together
- Chop 2 bunches of the spring onions into small pieces
- Dice the 4 tomatoes
- Chop the coriander and peppers together
- Crack the 2 eggs into a plate and whisk them
- Fill pan with cooking oil, the amount will allow the top of the patty to protrude slightly
- Plate of cold water for assistance with the forming of patties

Cooking Instructions:
1) Place mincemeat in large bowl
2) Add chopped spring onions
3) Add chopped tomatoes
4) Add copped  pepper and coriander mix
5) Add whisked eggs
6) Add spice mix from grinder
7) Add the fenugreek leaf (kasuri meethi)
8) Add ajwain (carom seed)
9) Add the corn flour
10) Add plain flour
11) Mix thoroughly by hand for at least 15 minutes
12) Place the mix in the fridge for 1 hour (important not to add salt yet)
13) 1 hour later, remove from fridge, add 1 tbsp of salt and mix well
14) Heat up pan with the cooking oil at medium temp
15) Dip fingers into the plate of cold water and then take a handful of the kebab mix to create a ball
16) Flatten the mix onto your hand and make sure there are no air pockets
17) Make a hole in the middle of the patty to avoid the patty breaking when frying
18) Place patty into the hot oil
19) Flip when golden brown (use a small plate to help you flip)
20) When the patty looks dark, it is ready to be removed the oil
21) Use the plate to squeeze out the oil
22) Cook the remainder of the kebab mix and enjoy
