Olive Oil Cake

Though it's delicious on its own, this simple cake can be dressed up in any number of ways, making it one of the most versatile dessert recipes you'll have in your recipe box. Poached or sauteed fresh fruit make a lovely topping - or try it as I like it best, with a spoonful of preserved Amarena cherries in syrup (Fabbri makes a good product) and a dollop of whipped cream. This cake keeps well, and is even moister after a day or two.
