ingredients:-
for momo wrapper
1 cup wheat flour
1 cup a.p flour
salt to taste
water as required
1 tsp oil
for momo filling
1 tbsp oil
1 tbsp ginger-garlic paste
1 cup mushroom
1/2 cup carrots
1 cup mixed bell pepper
1/4 cup corn
1/2 cup cabbage
salt and pepper to taste
1 tsp light soy sauce
1 tbsp red chilli sauce
1/4 cup processed cheese
for jhol gravy
1 tbsp soy beans
2 tbsp peanuts
2 tbsp sesame seed
1 tbsp oil
1 tbsp black pepper
1 tsp cumin seed
1 tbsp ginger-garlic
1 tbsp coriander stems
1 no. green chilli
1 medium onion
4 to 5 dry kashmiri red chilli
5 medium tomatoes
1 tsp coriander powder
1/4 tsp turmeric
1 tsp red chilli powder
salt to taste
1 cup water
2 to 3 tbsp sesame/peanuts/soybean powder
1 tbsp lime juice

method :-
- for the momos wrapper combine flour, salt and water. knead it into soft and smooth dough. apply some oil to prevent it from drying and cover it and let it rest for 30 minutes.
- in a wok, heat up some oil, sauté ginger and garlic for a minutes and sauté also other veggies on high flame. add soy sauce, red chill sauce and salt & pepper to taste.
- remove the veggies and once it's cool completely add cheese and mix it well.
- divide the dough into small pieces and roll it thin and round, fill the wrapper and apply water on the side, fold it into momo or dumpling.
- steam the momo for 10 to 12 minutes.
- for jhol , in a pan first roast the soy beans , sesame and peanuts. grind it into a powder. now take a pan or wok add oil and sauté spices (cumin, black pepper) , sauté ginger- garlic, green chili, onion and coriander stem for a minute. now add dry chili , tomatoes, salt, other spices(masala) and salt to taste. cook it for 1 to 2 minutes and add water. now cook it for 10 to 12 minutes or until tomatoes softens. grind the mixture into smooth puree. now add puree to the pan and add lime juice , also add water as required. cook it until it brings to a boil. serve it hot with steamed momos with some green onion on top.
