मक्की के आटे का दोसा के लिये आवश्यक सामग्री
Cornmeal Dosa Ingredients
मक्के का आटा - CornMeal - 1 Cup (150 grams)
आटा - Wheat Flour -1/4 Cup (35 grams)
जीरा - Cumin Seeds - 1 tsp
नमक - Salt - ½ tsp
लाल मिर्च - Red Chilli -1/2  tsp
धनिया पाउडर - Coriander Powder - 1/2 tsp
अदरक - हरी मिर्च -Ginger - Green Chilli Paste - 1 tsp
हल्दी - Turmeric Powder - 1/4  tsp
हरा धनिया - Coriander Leaves

For Chutney
Peanut - ½ cup, roasted
Chickpeas - ¼ cup
Salt -½ tsp
Green Chilli - 2, finely chopped
Ginger -½ inch
Coriander Leaves - 3-4 tbsp
Lemon - 1 no
Oil - 2 tsp
Mustard seeds - ½ tsp
Dry Red Chilli - 2 no
Curry Leaves - 10-12 no

For Stuffing
Oil - 2 tbsp
Mustard Seeds - ¼ tsp
Cumin Seeds - ½ tsp
Curry Leaves - 10-12 no
Ginger - Green Chilli Paste - 1 tsp
Green Peas - ½ Cup
Asafoetida - ½ pinch
Tomato - 1, finely chopped
Salt - More than ½ tsp
Turmeric- ¼ tsp
Boiled Potato - 4 (350 grams)
Coriander Powder - 1 tsp
Red Chilli Powder - ¾ tsp
Dry Mango Powder - ¼ tsp

1. In a bowl, add 1 cup (150 grams) of maize flour, ¼ cup (35 grams) of wheat flour and a little water and mix until the lumps are gone.  After mixing well, add more water to it and make a batter of thin running consistency.
2. Then add 1 tsp of cumin, ½ tsp of salt, ½ tsp of red chilli, ½ tsp of coriander powder, 1 tsp of green chilli ginger paste, ¼ tsp of turmeric and 3-4 tbsp of green coriander.  Mix all these well, the batter will be ready.  Cover it and keep it for 15-20 minutes.
3. Take ½ cup of roasted peeled peanuts, ¼ cup of roasted chickpeas, ½ tsp of salt, 2 green chillies, ½ inch of ginger, 3-4 tbsp of coriander leaves, juice of 1 lemon and 3-4 tbsp of water in a mixer jar.  Grind them finely, then take them out and add some water.  Chutney will be ready.
4. After this, heat 2 tsp of oil in a tadka pan.  Put ½ tsp of mustard seeds in hot oil and let it crackle.
5. After cracking, put 2 whole red chilies and 10-12 curry leaves and turn off the flame.  Stir them lightly and put them on the chutney and mix, the tadka chutney will be ready.
6. Put 2 tbsp of oil in the pan and heat it.  Reduce the flame to low and put ¼ tsp of mustard seeds in hot oil and let it crackle.  When it crackles, add ½ tsp of cumin and 10-12 curry leaves and fry it lightly.
7. Then add 1 tsp of green chilli ginger paste and fry it lightly.  After roasting, add ½ cup of peas and ½ pinch of asafoetida and mix it, then add 2 tbsp of water and cover and cook for 3 minutes.
8. After the time is up, mash the peas.  Put 1 finely chopped tomato (seeds removed), a little more than ½ tsp of salt and ¼ tsp of turmeric.  Mix them, cover and cook for 2 minutes.
9. When the time is up, mash 4 boiled potatoes, add 1 tsp of coriander powder, ¾ tsp of red chilli and ¼ tsp dry mango powder.  Cook them well by mixing and mashing them, remember that the potato pieces should not be too big nor too small.  Fry them for 2 minutes and the stuffing will be ready. Take it out.
10. Heat the pan, pour some oil on it and spread it all around.  When the tawa is hot enough, pour the batter while spreading it all around.  After spreading the dosa, put some oil around the dosa by raising the flame to medium-high.
11. Now roast it till it turns golden brown from below.  When it turns golden brown, flip it and bake it a little from the other side and turn it back.  Then put some stuffing on it and fold the dosa and take it off.
12. Make the rest of the dosa in the same way, the crunchy dosa of corn flour will be ready.  Serve them with chutney and enjoy their taste.  If you want, you can serve dosa like this without adding stuffing with aloo masala.
