This is dry version of capsicum. It is made using besan or chick pea flour along with capsicum. This can be a good lunch box option. This is made in typical Maharashtrian house hold. Besan enhances the taste of the sabzi and gives nice texture to it. It tastes fantastic and pretty easy to make. You can try this recipe at home and drop a comment for me. Ingredients:
• 2 tsp Oil
• 1/2 cup Besan
• 1 tsp Red chili powder
• Salt to taste
• 2 tsp Oil
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1/4 tsp Hing
• Finely chopped Garlic
• 6~7 Curry leaves
• Finely chopped Onion
• Finely chopped Green chilies
• 4 medium size chopped Capsicum
• Salt to taste
• Sugar as per taste (Optional)
• Lemon juice
• Finely chopped Coriander leaves

Method:
• Heat up oil in a pan and add besan.
• Roast the besan on medium heat until it gets light golden color for about 7-8 minutes stirring
 continuously.
• When besan changes the color, add red chili powder, salt and mix well.
• Turn off the gas and transfer the roasted besan into a bowl.
• Heat up oil in a pan.
• Add mustard seeds and let them pop up.
• Add cumin seeds and let it splutter.
• Add hing, garlic and fry well.
• Add curry leaves, onion, green chilies and mix well.
• Adding garlic and onion is optional. You can skip it if you don’t want.
• Fry everything well together until onion turns nice golden.
• Add capsicum and mix well.
• Add salt and mix well.
• Add salt carefully as we have added salt in roasted besan too.
• Cover and cook on medium heat for about 4-5 minutes.
•  Stir the sabzi at the intervals so that it won’t stick to the bottom of the pan.
• When capsicum is cooked well add roasted besan and mix well.
• Add sugar, lemon juice and mix well.
• Adding sugar is optional. You can skip it if you don’t like.
• You can use chat masala in place of lemon juice.
• Cover and steam on low to medium heat for about 10 minutes.
• Remove the lid and mix well.
• Add coriander leaves and mix well.
• Besan shimla mirch is all ready.
• It can be served as a side dish with rice or it goes well with roti, fulka.
