Here we are at 10 AM on 3 July already rolling some smoke and put this brisket on the grates at 180°. This bad boy is a 13 pounder! When I wake up at 7 AM, I’ll turn this thing up to 225°. All I really need to season this with is the kinder salt, pepper and garlic! It’ll come out tasting yummy. The thought is when I wake up, turn the heat up and it will likely be ready by 11 AM. Then I will wrap it in a towel and put it in a cooler for another 7 to 8 hours just to rest. The rest portion of this brisket cook is really just as important as getting the meat to 203° before you pull it off of the grill. But it will be ready come 5 o’clock 6 o’clock tonight to dig into!
