Ingredients -

Carrot ( gajar ) – ½ kg
Milk – 1 ltr
Ghee – 2 tbsp
Sugar – 200 g
Almonds (chopped) – 25 g
Cashew nuts ( chopped ) – 25 g
Pistachios ( chopped ) – 25 g
Cardamom powder – 1 tsp

Directions-

1. Firstly peel the carrots and grate the carrots evenly.
2. Then heat 1 tbsp of ghee in a pan and dry roast the chopped nuts till golden brown and keep aside.
3. Now heat another large vessel and add milk. Stir it well.
4. Allow milk to boil completely.
5. Further add the grated carrots and give it a nice stir.
6. Stir and cook carrots for 30 mins on medium flame till milk starts to reduce or thicken.
7. Additionally add sugar then stir and cook it for another 15 mins on medium flame.
8. Now add cardamom powder and 1 tbsp of ghee. Mix it well.
9. Further add roasted nuts then stir and mix really well.
10. Now the Gajar ka Halawa is ready to be served.
