Using water, isopropyl rubbing alcohol, oil, salt, and food coloring you can create a three-layer density column that can be mixed and will repeatedly separate into three distinct layers. One key to this experiment is a process called salting out and it is basically using salt to outcompete for the intermolecular attractions of water.

▶️  How to do the salting-out experiment:
Step 1: Add water to the container and stir in some food coloring.

Step 2: Add a layer of oil. I used vegetable oil,.

Step 3: Add a top layer of isopropyl alcohol, and stir in a different color of food coloring.

Step 4: Stir the container completely. Observe how it separates into two layers.

Step 5: Add in as much table salt as will dissolve. It's better to add too much than not enough, and the experiment will still work if there is some salt accumulating at the bottom.

Step 6: Stir really, really well.

Step 7: Observe how the column is no longer separating into two layers but is now separating into three.

▶️  How the salting-out experiment works:
At first, the column separates into two layers. This is because water and isopropyl alcohol are both polar molecules that have a force of attraction for each other so they'll mix together.

After you add in the salt, it starts separating back into three layers. What's happening is that the water has a greater force of attraction for the ions in the salt than it does for the isopropyl alcohol, causing the isopropyl alcohol to no longer stay mixed with the water. And depending on what oil you chose to use, the isopropyl alcohol will likely have a lower density and float to the top of the column.

❗️ Note: One key to this experiment is using the right food coloring. Some food coloring has a similar attraction to both water and isopropyl alcohol, and this would cause both layers to be about the same color. You might need to test your food coloring to figure out which ones are the best choices.
