Last Thanksgiving you had enough sweet potatoes to feed everyone and may have even had some left over. Now it's time to use put those left-overs to work for this coming year!  I have saved scrawny sweet potatoes like this for 3 years in a basket and used them to grow another bumper crop when I was finally ready. You can too!

Sweet Potatoes are able to be grown in terrible conditions and are considered a "super-food" for their incredible nutrition. They can be eaten a myriad of ways, so even if you haven't been a fan in the past, I hope you will reconsider giving them some love and just see if you don't find a place in your heart and garden and table for them! :)
