Easy Loaded Baked Potato Casserole! Absolutely Scrumptious!

Loaded Potato Casserole!

I just made this up from scratch and it was so good!  My husband and I thoroughly enjoyed this one.  
   I hope all has been well with all of you.  This is certainly a busy time of year.  
   I still haven’t finished up my Christmas shopping.  By now I am usually done, but these grandchildren get harder and harder
to buy for every year.  
    And they already have so much, but Um-Ma and Pa-Pa love to see the smile on their faces.
     We have four grandchildren. How about you? Any grandchildren?
    I believe we are going to have finger foods this year for Christmas.  
It may be after Christmas before I get to post some of those recipes.  
     We shall see.  
    This loaded potato casserole would be a great casserole to take to a Christmas gathering.  I would double it, and garnish with sour cream and chives.  Yum!
     You just can’t go wrong with potatoes and bacon.  😉
    And I highly recommend using these baby yellow potatoes in this recipe.

Ingredients
1- 1.5 lb bag Baby Dutch Yellow Potatoes
3 Tbsp butter
1/2 C ranch dressing
3/4 C bacon bits ( or fresh precooked and crumbled bacon )
1 1/2 C shredded cheddar cheese  
(Garnish with sour cream and chives)
Salt and Pepper to taste
