Murukku || South Indian Crunchy Snack Recipe - RKC

Ingredients
* Urad daal 1 cup
* Rice flour 4 cups
* Water 2 cups, to cook daal
* Butter 4 tbsp, melted
* Ajwain seeds 1 tbsp
* Salt to taste
* Cumin seeds 1 tbsp
* Chilli powder 1 1/2 tsp or adjust
* Pinch of baking soda
* 1/8 tsp Asafoetida (optional)
* Sesame seeds 1 tbsp(optional)
* Oil for frying
* Water to mix the dough(1/2 cup or less)

Preparation
1. Soak daal for 1 hour.  Pressure cook the daal with 2 cups water for 3 whistle in the stovetop pressure cooker. Here I used used instant pot and cooked 5 minutes on high pressure.
2. Open the cooker and Grind the cooked dal in grinder and then mix with rice flour and all the other ingredients
3. Fill the Nurukku Mould with dough and press the mould to a spiral shape in a ziplock or butter paper or foil paper first.
4. Heat oil in a kadai, set the flame to medium, and then drop gently to the hot oil and fry until crisp and light brown.
5. Drain them on a kitchen tissue to remove excess oil.
6. Cool them completely. Store murukku in a airtight jar. Enjoy!
