ಅಲಸಂದೆ ಕಾಳು ಮತ್ತು ಪಡವಲಕಾಯಿ ಹಾಲು ಸಾರು (Alsande Kalu Padavalakai Haalu Saaru)
Ingredients:
• Alsande kalu (Cowpeas) - 1 cup
• Padavalakai (Snake gourd) - 1 medium-sized, chopped
• Fresh coconut - ½ cup for blending
• Milk - 1 medium glass
• Red dry chilies - 6 for blending
• Mustard seeds - ¼ tsp
• Curry leaves - a few
• Salt - to taste
• Oil - 1 tbsp
• Pepper - ¼ tsp
• Garlic cloves - 10 for blending
• Raw rice - 1 tbsp
Instructions:
1. Prepare the Masala: Blend the fresh coconut, garlic cloves, fried raw rice (fried until golden brown), red dry chilies (lightly warmed), and pepper into a fine paste.
2. Cook Alsande Kalu and Snake Gourd: In a pot, cook the alsande kalu (cowpeas) in ½ liter of water with a little salt for 5 to 7 minutes. Then, add the chopped padavalakai (snake gourd) and cook for another 5 to 7 minutes.
3. Add the Blended Masala: Mix in the blended masala paste and add salt to taste. Let it boil for 5 minutes.
4. Add Milk: Pour in the milk and allow the mixture to boil for another 5 minutes.
5. Tempering: In a small pan, heat 1 tbsp of oil, add mustard seeds, and once they splutter, add curry leaves. Pour this tempering over the saaru and mix well.
6. Serve: Serve the haalu saaru hot with rice.
This dish combines the richness of coconut and milk with the earthiness of cowpeas and the subtle flavor of snake gourd, making it a comforting meal.
