BEEF POT ROAST
1 kilo beef brisket OR kenchie, cut into 2inch cubes
Butter, as needed
1 pc onion, coarsely chopped
2 tablespoons minced garlic
Pinch of thyme (dried), add more if using fresh
3 pcs bay leaves
¼ cup soy sauce
1 cups water
Red wine, as needed
Salt and pepper, as needed
To assemble:
Butter, as needed
2 tablespoons all-purpose flour
½ cup heavy cream
Dried shitake mushrooms
Mashed Potatoes:
1 kilo potatoes, peeled and boiled until tender
½ cup heavy cream, plus additional as needed
120 grams butter
Truffle oil, salt and pepper
For garnish:
Cherry tomatoes
Chopped parsley
Whole garlic, roasted
