Easy Baked Haddock Recipe

Haddock is a inexpensive fish but big on flavour,  when breaded and baked over a bed of sliced leek makes for a very enjoyable meal.  Serve with a nice fennel coleslaw and orange slices.

4 Haddock fillets
Salt and pepper
1 leek sliced
1tbsp olive oil

1tbsp mayonnaise
1tsp Dijon mustard

1/2 cup dry bread crumbs
1/4tsp paprika
1/4tsp dry thyme
1/4tsp onion powder
1/4tsp garlic powder
Salt and pepper
4tbsp melted unsalted butter
Bake at 350F for 10-15 minutes
