Mamak-style is from the Indian & Muslim community in Malaysia. Whereas Nyonya is from the Malaysian Chinese community who had adopted the Malay culture. These two dishes are VERY POPULAR in both MALAYSIA and SINGAPORE. We will cook Nyonya version of fish head curry which is also my favourite! Restaurants in Malaysia normally serve this in a claypot but you can cook this in a wok, pan, or a pot. In this recipe, I use Garoupa (Grouper/ Kerapu) fish head.
