This Eggplant Rollatini recipe is one of the finest and easiest eggplant recipes to make at home. This is a great low carb eggplant recipe as we skipped the bread crumbs and flour on this one. Vegetarian friendly and a super delicious Italian recipe the whole family will absolutely love!

INGREDIENTS
• 1-2 large eggplant, cut into ½ inch thick rings
• salt

Tomato Sauce
• 1 medium onion, small dice
• 6-10 garlic cloves, minced
• 2 tbsp olive oil
• 2 tbsp tomato paste
• salt & pepper
• ½ tsp Italian seasoning
• ½ tsp dried oregano
• 15 oz can petite diced tomatoes
• 15 oz can crushed tomatoes
• 8-10 basil leaves
• ½ cup strained tomatoes

Cheese Filling
• 15 oz ricotta cheese
• ½ cup pecorino romano cheese
• ½ cup parmesan cheese
• 3 eggs
• 1 cup shredded mozzarella cheese

• 2 tbsp chopped fresh parsley

• fresh basil leaves, hand torn (to garnish)


DIRECTIONS
1. Preheat oven to 400F
2. Salt sliced eggplant and let sit for 15-30 minute for salt to draw out water from the slices
3. In a saucepan oven medium low heat, add olive oil and onions to sauté for 5-10 or until soften and translucent.
4. Add garlic and cook for 1-2 min or until fragrant
5. Add tomato paste and mix well. Cook for 1-2 minutes.
6. Add canned crushed and diced tomatoes. Season with Italian seasoning, oregano, salt & pepper. Add strained tomatoes.  Simmer for 10-15 minutes.
7. Mix in fresh basil leaves, cover and shut off heat. Leave covered until ready to assemble the rollatini.

9. Place spread out on two baking trays and place in preheated oven for 10-12 min or until eggplant begins to soften. Remove from oven and let cool.
10. Mix together Cheese Filling Ingredients.
11. Spread a thin layer of sauce on the bottom of a 13 x 9 baking dish. Place a large spoonful of cheese filling in each eggplant slice and roll up. Place in baking tray with the end meeting underneath on top of the sauce.
12. Spoon a little sauce on top of each rollatini and sprinkle with a little pecorino romano cheese and a pinch of mozzarella cheese.
13. Place in oven for 25-35 min or until cheese is melted and beginning to brown.
14. Let cool for 5 min before garnishing with fresh basil.
