MAKING PERI PERI CHICKEN THE FIRST TIME

The first time I recreated a version of Nando’s Peri peri chicken, I have made it more than 4 times since then…it is so good!

I will be sharing my updated recipe since I filmed this video below 👇🏾


PERI PERI SAUCE

1 small onion
5-7 cloves of garlic
1/2 red bell pepper
3 Serrano peppers
4 dried arbol chilies
1 Tbsp tomato paste
3 habanero peppers
4 dried bay leaves
2 Tbsp chicken bouillon powder
2 packets goya sazon
1/2 Tbsp vinegar
2 Tbsp sugar
1 star anise
7 Tbsp oil

blend them all together

CHICKEN

I used 6 chicken leg quarters
(wash and pat dry)

coat them with the sauce (save about 2/3 of the sauce for the second coating and dipping)

Roast in oven at 475 until fully roasted (25-30mins)

remove and coat with more peri peri sauce, garnish with parsley and serve
