For the cream
2 eggs
Juice of 1 lemon
Zest of 1 lemon
50/60 ml vegetable milk
100 g erythritol
For the muffins
200g oats
25g coconut
50g olive oil
1 tsp yeast
150g coconut yogurt
150g erythritol
60g almond milk
1 egg
For the cream: In a saucepan, mix all the ingredients for the cream and cook over low heat until it thickens (about 8-10 minutes). Put the cream in the fridge covered with plastic wrap.
For the muffins: mix oats, shredded coconut and baking powder. Now add all the other ingredients and mix well. Put a little bit of dough on the bottom of a mold, make a small hole in the center and put some lemon cream into it. Cover with more dough. Bake in a ventilated oven for 30 minutes.
Once cooked, let it cool and complete with more lemon cream and rapé coconut!
