Ingredients:

Protein:
Chorizo Sausage
Streaky Bacon

Seasoning:
Brown Sugar (1/4 cup)
Smoked Paprika (1/4 cup)
Onion Powder (2 tsp)
Garlic Powder (2 tsp)
Coarse Black Pepper (3 tbsp)
Salt (3 tbsp)
Cayenne Pepper (1 tsp)

Stuffing:
Jalapenos
Cream Cheese (any flavour)
Cheddar Cheese

Steps:

1. Head over to your supermarket and grab your chorizo, streaky bacon and other goodies for this recipe.
2. Take your chorizo sausage and cut it down into coins that are about 1 cm thick.
3. Take your streaky bacon and wrap it around the chorizo and secure it with a toothpick. Once this is done it will resemble a shot glass.
4. Mix your seasoning together and then set aside.
5. Allow your cream cheese to soften slightly before scooping out some into a bowl. You will add grated cheddar cheese to the bowl as well. You will need to do a 50/50 ratio.
6. Once the cheeses are in the bowl you can add a few teaspoons of the rub. Ensure that you mix well.
7. You can then take the cheese mixture and stuff the pigshot glasses. Make sure that it is packed in well as it will soften and some could possibly run out.
8. Once all the pigshots are stuffed you can season the top with some more rub and then top with some jalapeno slices. Then set aside while you get the Kamado fired up.
9. Head over to the Kamado and throw in some lump charcoal. Place a firelighter in the charcoal and light it. Allow the charcoal to ignite and lock the Kamado in at around 110°C-120°C.
10. For this recipe we will be smoking the pigshots indirectly, so you would need to put in the deflector plate under the grate.
11. Once the Kamado reaches the desired temperature you can add your preferred wood chunks, for this cook we went with Peach wood. You can then add the pigshots to the grate and then close up.
12. After around 30 minutes of smoking the bacon will have firmed up and the cheese would have fully melted and all those flavours would have merged.
13. Remove from the heat and set aside for 5 minutes then you can enjoy.
