Bored of eating usual aloo bhindi? Try this tasty dhaba style masaledaar aloo bhindi fussfree at home.

ALOO BHINDI DHABA STYLE

Ingredients

3 medium potatoes (aloo), cut into wedges
300 grams lady fingers (bhindi), cut into 1 inch pieces
2 tbsps oil
1 tsp cumin seeds
½ tsp asafoetida (hing)
1½ tbsps chopped garlic
2 green chllies, chopped
½ tsp red chilli powder
½ tsp turmeric powder
2 tsps pav bhaji masala
2 tsps coriander powder
½ tsp cumin powder
½ tsp chaat masala
Salt to taste
¼ tsp garam masala powder
2 tsps lemon juice
2 tbsps chopped fresh coriander leaves + for garnish

Method

1. Heat oil in a kadai. Add cumin seeds and let them change colour.
2. Add asafoetida, garlic and green chillies and sauté for 30 seconds.
3. Add lady fingers and potatoes and mix well. Roast on high heat for 4-5 minutes while stirring in between every minute.  
4. Add red chilli powder, turmeric powder, pav bhaji masala, coriander powder, cumin powder, chaat masala, salt, and garam masala powder and mix till well combined. Reduce the heat to medium and cook for 8-10 minutes, mixing in between every few minutes.
5. Drizzle the lemon juice and add coriander leaves and mix well. Serve hot garnished with coriander leaves.
