Kashmiri Pulao has an unforgettable taste that differentiates it from other Pulaos. This rice delicacy is made using some easily available ingredients. It's a fusion of mild spices and rich dry fruits glazed in ghee. The list of ingredients 1. 3 cups of basmati rice 2. 3 thinly sliced deep fried onions 3. 1/2 cup of ghee(clarified butter) 4. 3 small cinnamon sticks 4. 4 black cardamoms 4. 8-10 green cardamoms 5. 2 tsp of fennel seed powder/fennel seeds 6. 2-3 bay leaves 7. 2 tsps. cumin seeds 8. 1 & 1/2 tsp of salt (according to your taste) 9. A pinch of turmeric powder 10. Dry fruits(Peeled almonds, cashews, coconut scraps, pitted and sliced dry dates, raisins) Walnuts can be also added In a pan, take 8-9 glasses of water(Kindly check basmati rice packaging and take accordingly)bring water to boil and add whole spices(green and black cardamoms, cinnamon sticks, cumin seeds, bay leaves, fennel seeds, turmeric powder) let it boil for 5 minutes, after 5 minutes add fried onions and keep boiling for 10 minutes till water turns brown. Then strain this waterand bring this strained water/stock to boil and add washed basmati rice and boil till its 80 percent done. Now in a pan heat up ghee and add dry fruits and sauté them nicely and add rice and mix properly, cover and let it cook on low flame for 15 minutes or till you smell Pulao aroma in whole house :D The above measurements are for 3 cups of rice that will serve 6-8 people. The delightful rice delicacy is ready. Serve it hot.
