Over history vinegar has proven itself among the essential products humans needed to survive. But this German vinegar estate, located in the Palatinate region, took vinegar into the gourmet world of wine. It produces a variety of prize-winning wine vinegars that ferment and mature in hundred-year-old barrels. The whole process can take up to 10 years. The Trockenbeerenauslese, or TBA on which the vinegar is based is one of the world's most sought after grape for winemaking.
