Mawmaw Vi's Buttermilk Biscuits
*Ingredients:*
- 2 cups self-rising flour
- 1/2 cup shredded butter (frozen for about 15 minutes)
- 1 teaspoon baking powder or a good pinch
- 1/2 teaspoon of himalayan salt (if using table salt use 1/4 teaspoon)
- 1/2 cup buttermilk or more if needed

*Instructions:*

1. Preheat your oven to 425°F (230°C).

2. In a large mixing bowl, combine the self-rising flour, salt and baking powder. Mix well to ensure the baking powder is evenly distributed.

3. Using a box grater, grate the frozen butter directly on baking sheet or pan. Work quickly to prevent the butter from melting. Once all the butter is grated, gently toss it with the flour mixture until the butter is evenly coated.

4. Make a well in the center of the flour mixture and pour in the buttermilk. Using  your hands, gently mix the buttermilk into the flour mixture until a soft dough forms. Be careful not to overmix.The dough should feel slighty sticky and wet.

5. Turn the dough out onto a lightly floured surface. Gently knead the dough by patting, folding and rotating between 10-15 time to build layers  or until it comes together. Pat the dough down until 1 inch thick.

6. Using a biscuit cutter or a glass dipped in flour, cut out biscuits from the dough. Place the biscuits onto the prepared baking sheet, allowing them to touch.

7. Gather any remaining dough scraps, gently pat them together, and cut out more biscuits until all the dough is used.

8. Bake the biscuits in the preheated oven for 12-15 minutes, or until they are golden brown on top and cooked through.

9. Remove the biscuits from the oven and let them cool slightly on the baking sheet before serving.

10. Enjoy your delicious homemade buttermilk biscuits with butter, jam, gravy, or any other toppings of your choice!
