■Rare cheesecake
70g cookies
20g unsalted butter

200g cream cheese
30g sugar
5g gelatin
20g hot water
130ml heavy cream
10g sugar
5ml lemon juice
40g blueberry puree

■Blueberry puree
100g blueberry
30g sugar
10ml lemon juice
3g gelatin

■Topping
130ml heavy cream
5g sugar
5ml lemon juice

▷How to make:
1. crush the cookies into small pieces and blend with melted unsalted butter. Place the cookies in a mold.
2. Make the blueberry purée. In a saucepan, heat the ingredients and simmer until the pulp is crushed.
3. Strain the blueberry purée and add the gelatin plate that has been blanched in ice water and dissolve.
4. Make the cheesecake. Add sugar to cream cheese and mix until smooth.
5. Add the gelatin that has been blanched in ice water to the hot water and dissolve. Add the gelatin to the cream cheese mixture and mix until smooth.
6. Add 130 ml of heavy cream and sugar, whisking loosely. Add lemon juice and mix.
7. Separate 120 g of the finished rare cheese cake, wrap in plastic wrap and set aside at room temperature.
8. Add 40g of the blueberry purée and mix. Pour the mixture into the mold (1) and chill in the freezer for 30 minutes until the surface hardens.
Pour the mixture into the mold (7) and chill in the freezer for 30 minutes.
10. Pour in the blueberry purée and refrigerate overnight.
10. Beat 70 ml of whipping cream with sugar and lemon juice until it is stiff enough to squeeze. Decorate the hardened rare cheese cake.
