One of Paula's famous dishes is Not yo' Mama's banana pudding. People stop her all the time and ask her about her pudding.  In this episode Paul dives into her tips and tricks from making her famous no yo' mama's banana pudding.

1. Mix your whipping cream and confectioners sugar is whipped well, but not overwhipped as it will turn it into butter. Perfectly whipped cream will let you run your finger across it and keep the indentation. You should see soft peaks in the cream.

2. Use a cold bowl to whip your cream. Put the bowl and beaters in your freezer to get a better whip on your cream

3. Put your beaters in the freezer to make them cold and help whip the cream more effectively.

4. Make sure your cream cheese is at room temperature. Put it out on the counter to bring it to room temperature.

5. Use sweetened condense milk , NOT evaporated milk.

6. Use a whisk to mix the pudding mix and SLOWLY add in the milk to incorporate the pudding mix with the milk.

7. Use Chessmen cookies by Pepperidge Farm. You can also use homemade shortbread cookies or Pecan sandies. Put a row of cookies down and then the mixture of pudding, whip cream and then a layer of sliced bananas and then repeat until done.

8. To keep bananas from turning brown. Use lemon juice on them. You can also use this trick on apples.

9. There is no exact ratio of cookies, whip cream and custard. Use what you like in the recipe.
