Hi all we had a few extra brinjals so we decided to show how we make battered brinjals or brinjal bhajia from scratch. You can always use ready made bhajia mix but we decided to mix up our own batter that can be used for different vegetables as well as battered fish too!
Ingredients
2 large brinjals (egg plant)
Batter
2 cups flour, sifted
2 level tsp baking powder
1 1/2 tsp fine salt
1/2 tsp methi seeds
1 tsp saunf (fennel) seeds
1 tsp dhania (coriander) seeds
1 tsp jeera (cumin) seeds
1/2 tsp dried mixed herbs
1 tsp mixed masala
Oil for frying
Serve piping hot with a nice cup of tea in the afternoon!
