Paneer Tikka Sub Sandwich
Ingredients:
For Paneer Tikka -
1/2 cup paneer, cut into cubes
1/2 cup green, red and yellow capsicum, cut into cubes
1/2 onion, cut into cubes
2 tbsp curd
Salt to taste
1/4 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
1 tsp cumin powder
1 tsp garam masala
1 tsp kasoori methi
2 tbsp mustard oil

For Dip-
3-4 tbsp thick curd
2 tbsp mint coriander chutney

For layering the sub sandwich -
2-3 sub sandwich bread
5-6 lettuce leaves
Few tomato slices
Few cucumber slices
Few onion rings
Salt and black pepper to sprinkle


Instructions:
For Paneer Tikka -
For marination, In a wide bowl, add curd, salt, turmeric powder, kashmiri red chilli powder, cumin powder, kasoori methi and mustard oil and mix well.
Then add paneer, red, green and yellow capsicum and onions and coat the marination on the vegetables thoroughly and keep aside for 15-20 minutes.
Now take a non-stick pan, heat the pan.
Once the pan is hot, add the marinated paneer and saute all the vegetables with paneer in a high flame for 3-4 minutes.
But be careful, we have to keep the crunch of the vegetables but vegetables and paneer should have a slightly brown colour on all the sides.
Then transfer yeh paneer and vegetables in the bowl and keep aside.

For Dip-
In a bowl, add curd and mint coriander chutney and mix well.
You can make your dip by using tomato ketchup and mayonnaise too but I avoided making it healthy.
It's as per your choice.

Let's layer the sub sandwich -
Then on the sub sandwich bread, apply butter on both the sides of the bread and slightly toast the bread from both the sides on the tawa.
If you don't like butter, you can apply ghee too and then toast the bread from both the sides.
Once the sub bread is toasted well, take them out on a plate.
Then apply, curd dip on the both slices of sub bread.
And then add lettuce leaves on the dip layer and then add our prepared paneer tikka on the lettuce.
On lettuce, add a few tomato slices,  cucumber slices and onion  rings on the paneer tikka.
Then sprinkle salt and black pepper on the tomato, cucumber and onions.
And then on the another slice of the sub bread, apply a few lettuce leaves.
Then close the sub bread sandwich with both the slices and cut into 2 pieces and serve with tomato ketchup and mint coriander chutney.
And along with a few chips or french fries and enjoy!!
