Sous Vide Creme Brulee

You can also make this sous vide recipe in a jar.

Ingredients:
8 Egg Yolks
1/2 cup sugar
1 tsp vanilla paste
Pinch of fine salt
Mix, and add 2 cups of heavy cream… mix again.

Pour all ingredients into a bag

Place into a preheated sous vide bath at 84 degrees Celsius for 1 hour

Remove from sous vide, and place in an ice bath to allow for easier handling.

Pour into  four or five  6 oz. ramekins, and chill for 4 hours or overnight

Top with raw sugar, and torch until the top is completely caramelized

Enjoy!

Cooking Creme Brûlée traditionally isn’t difficult, but it can be a bit finicky.. especially if you are using an oven you aren’t used to. I like cooking creme brûlée sous vide because you skip the steps of heating the cream, and the recipe is consistent every time.

Most recipes online will have you add the creme brûlée to a jar, tighten the lid a specific way, and pray that no water seeps in…

If you jar lids don’t have a perfect seal, you could be in for a disappointing surprise when you go to finish the dessert. This has happened to me more than once, which is why I decided to seek out a way to make this without a jar.

Also, what if you just don’t have a shallow, wide mouth jar?? This recipe allows you to pour the cooked creme brûlée into any dish, so you can really get creative here. Just a word of caution, make sure your dish can withstand the heat of a torch. I would suggest porcelain, as it is heat resistance anywhere from 1200 to 2000 degrees Fahrenheit.
