Baingan Hari Mirch n Aloo Ki Sabji

Ingredients:
7 no - Brinjal ( Cut into Long Strips )
5 no - Potato ( Cut into Long Strips)
7 no - Green Big Broad Chilli

Garlic Chutney
12 no - Garlic Clove
2 tbsp - Red Chilli Powder

1 tbsp - Ginger Chilli Paste
2 tbsp - Roasted Peanut Coarsely Grinded
2 tbsp - Besan Sev Crushed
3 tbsp - Desiccated Coconut
2 tbsp - Jaggery
1 tbsp - Coriander Cumin Powder
1 tsp - Garam Masala Powder
1 tsp - Turmeric Powder
Salt to taste
1/2 Cup - Coriander Leaves Chopped

3 tbsp - Oil
1 tsp - Mustard Seeds
1 tsp - Cumin Seeds
1/4 tsp - Turmeric Powder
1/4 tsp - Asafoetida ( Hing )
2 no - Tomato Puree
1 Cup - Water
1 tbsp - Coriander Leaves Chopped
Method :
Cut All Sabji like Strips
Chutney : Crush all the ingredients and make a Chutney
Take a Plate and add the above garlic Chutney,
Ginger Chilli Paste, Roasted Peanut Coarsely Grinded, Besan Sev Crushed ,
Desiccated Coconut , Jaggery , Coriander Cumin Powder , Garam Masala Powder , Turmeric Powder, Salt to taste , Coriander Leaves Chopped, Mix all the things Properly
Take a Pressure Cooker and Oil then add Mustard Seeds,  Cumin Seeds. let Crackle then add Green Chilli Cut , Potato , Turmeric Powder , Hing , Brinjal Cut. mix Properly then add Half Masala , Mix Properly .Add Tomato Puree .Mix Properly and Add Remaining Masala , Mix Properly and add Water
Mix and Give 2-3 Whistle and Lastly add Coriander Leaves Chopped
Serve Hot .
