ISOMALT LOLLIPOPS
1 cup isomalt
1/4 cup water

In a sauce pan combine isomalt and water to a medium  with candy thermometer, let it boil and dissolve all the isomalt until reaches 320-360F , when it reach the right temp , remove from the stove and let reduces the temp to 180F before transferring to silpat… you can make your own version of isomalt lollipops.
