Fake rice - Marco's cabbage rice
Cauliflower rice with spices: an easy, tasty and original side dish
Here is one of those dishes that Marco cooks every now and then when he is in a creative mood: fake rice, which we have renamed "Marco's cabbage rice" ... since it is literally a cauliflower "rice"!

The fake rice didn't invent it himself, but I assure you that his is a very tasty version and ten out of ten, and moreover it can be prepared in a few minutes: we just have to chop the cauliflower, blend it in a mixer and here it is. we will have our "rice grains" to cook quickly in a sautéed onion, carrot and celery. Marco used a wok, but if we don't have it, a large pan is also fine.

Once sautéed for a few minutes, it will be time to flavor our fake rice with the spices we prefer: in this recipe there are curry, turmeric and ground pepper. But we can use all the ones we want, for example even paprika, cumin, or put a little bit of Tabasco if we love spicy. A nice mix et voilà: we are ready to bring cauliflower rice to the table and enjoy it hot!

A creative and versatile dish
Very easy, fast and light, this cauliflower rice is also versatile because we can serve it both as a single vegetarian dish and as a rich side dish for many main courses of meat or fish. It is a gluten-free and light dish, and if we want to make it even lighter we can cook it only with water and then season it with raw oil.

The variations and customizations are truly infinite: first of all we can use, instead of white cauliflower, also the purple or green one, or Romanesco broccoli. We can vary the sauté and use shallots or leeks instead of the onion, and of course add the ingredients we prefer to enrich it, a bit like couscous.

If we have a little left over, we can keep our fake cauliflower rice in a food container for up to three days, while the raw cabbage in grains can also be frozen and can be kept for up to 3 months. When it is time to use it, we defrost it directly in the pan with hot oil.
