In this episode, I'd like to share with you 'MERCIMEKLI KOFTE' recipe. One of the most popular appetizers of Turkish cuizine. Perfect for lunch or a light summer supper. It is extremely easy to prepare, nutritious and amazingly delicious. Moreover; no pan frying, no baking... Just form them and serve.

INGREDIENTS

1 cup red lentils
3/4 cup fine bulgur
1 large onion
7-8 sprigs green onions
1 cup parsley&fresh dill
1 tbsp tomato paste
juice of one lemon (optional)
10-12 lettuce leaf
Salt & Pepper
1 tsp sweet paprika
1 tsp ground cumin
1/4 cup olive oil

DIRECTIONS:

Transfer the rinsed lentils into a big pot.
Add 2 cups of water.
Add a pinch of salt and bring to a boil over medium high heat.
Meanwhile, finely chop the onion into cubes.
When it comes to a boil, skim off the foam and reduce the heat to low and cover,
leaving the lid slightly ajar.
Simmer for 10-15 minutes until the lentils tender.
Then remove from heat, add bulgur and allow it to absorb the remaining water.
Leave undisturbed and covered for 15 minutes.
Meanwhile, sauté the onion in olive oil for about 10 minutes stirring occasionally over medium low heat.
Add a pinch of salt and pepper.
Finely chop green onions, parsley and dill.
Place lettuce leaves to cover the bottom of a serving dish.
When the onions are tender, add paprika, cumin, tomato paste and mix well.
Remove from heat and combine with the lentil& bulgur mixture.
When cools enough to handle, knead for 2-3 minutes.
Stir in the chopped veggies.
It is optional but add the lemon juice if desired and knead gently until well combined.
Season to taste.
Form into cigar-shaped patties and place on the serving dish.
For various presentations, you can form into a smoother cylinder shape.
Or into tiny bowls and then fill them with chopped lettuce.
You can also use a cookie/biscuit cutter...
