Lavender has light purple flowers that release a beautiful fragrance. They have been grown commercially to extract the essential oils dating back to the ancient Egyptians. To the ancient Greeks, Lavender was known as Nard or Nardus. Greeks and Romans would add the fragrant flowers to baths to release a relaxing perfume. The leaves have a mild aroma and can be dried to use as a potpourri. Tea can be made from the flowers or the leaves, the flavor pairs well with lemon. Lavender flowers make delicious candies when cooked in a simple syrup and rolled in granulated sugar. The flowers can be dried on the plant and harvested for seed. Tease the dried flowers apart and the seeds will settle to the bottom. Sow seeds as deep as the seed is tall and keep them in a warm and bright location. Plant them in rows along walkways for a dramatic purple border that releases a magnificent aroma.
