Bengal Gram 1/2 cup
चना दाल 1/2 कप
Husked Green Gram 1/2 cup
धुली मूँग दाल 1/2 कप
Salt or to taste or 1 tsp
नमक स्वादानुसार या 1 छोटा चम्मच
Asafetida 1/4 tsp
हींग 1/4 छोटा चम्मच
Red chilli powder 1/2 tsp
लाल मिर्च पाउडर 1/2 छोटा चम्मच
Cumin seeds 1 tsp
ज़ीरा 1 छोटा चम्मच
Coriander seeds 1 tbsp
सबुत धनिया 1 बड़ा चम्मच
Peppercorns 1 tsp
सबुत काली मिर्च 1 छोटा चम्मच
Baking powder 1/2  tsp
बेकिंग पाउडर 1/2 छोटा चम्मच
Cilantro 3-4 sprigs
हरा धनिया 3-4 तने
Oil for deep frying
तलने के लिए

While grinding the lentils use water only if its required. We need coarse & drier mixture.
First frying should be done on Medium heat.
Don’t touch the vadas for initial 10 seconds, and then reduce the heat. Cook till firm.
Cooling the vada for about 30 minutes is important.
You can make & keep these vadas in fridge for later use to save time for a party.  
Second frying the should be on medium/high & medium heat till crisp.
