How to Pickle Banana Peppers

This is how I can banana peppers. Because I am the only one in the house that eats them, I use 1/2 pint jars instead of pints. I use this same recipe (minus the mustard and celery seeds) to can jalapeno slices.
Recipe (using pints)
2 3/4 lbs of peppers sliced
1/4 tsp mustard seed per jar
smidgen of celery seeds per jar
6 cups vinegar
2 cups water
1 Tblsp Canning salt
1/8 tsp per Jar Pickle crisp

Pack into jars along with a clove of garlic to 1/2 inch headspace.
Bring your Brine (vinegar, salt and water) to a boil. Pour over peppers in jars keeping the same headspace. Put lids and rings on, put in hot waterbath canner, bring to a boil and process for 10 minutes.
Makes 5 pints
