Baingan ka salan or brinjal
Baingan ka salan or brinjal curry is a famous chennai side dish for Biryanis.Tasty brinjals are fried
and then roasted in various masalas which enhances it's flavours.The tangy flavour of this recipe
adds a unique taste to this recipe.
COOKING METHOD
==============
1.Brinjals - 1/2 kilo
Wash them and give a slight cut.
2.For curry masala
Tomatoes - 5 medium sized
Sesame seeds - 20 gram
Garlic cloves - 8
GRIND THESE INGREDIENTS
3.Soak tamarind in water - lemon sized
4.Heat oil - 3 tablespoon, to it add brinjal and fry.
5.Then add peppercorns - 1 teaspoon and few curry leaves.
6.Add ginger garlic paste - 1 teaspoon fry till raw smell disappears.
7.Now add the ground masala and fry till it is roasted well.
8.To it add
Red chilli powder - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Mix them and cook well till dry.
9.Add tamarind pulp.
10 Add salt - 1 teaspoon.
11.Add coriander leaves and add water - 1/2 glass.
12.When it starts boiling low flame and cook for 5 minutes.
13.Switch off the flame and add vinegar - 1 teaspoon.
14.Brinjal curry chennai style is ready..serve it with any type of biryani.
