Maqluba is a super delicious meal served all over the Middle East. Depending on the region, and really the cook who makes it, you will see a LOT of variation in maqluba.

I made my maqluba with chicken, but sometimes you will see it cooked with lamb (especially to honor special guests).

For veggies, I used cauliflower and eggplant, but many people also use a layer of potatoes or tomatoes on the bottom. I have even seen some cooks use carrots and  other vegetables!

The great thing about maqluba is that you can refine it to be your own signature maqluba recipe!
