How to Eat Daikon Radishes - Soup & Salad Recipes || Black Gumbo

Many people have asked me how to cook daikon radishes. This Asian radish is a very mellow vegetable and happens to be a superfood. It is packed with vitamins and very good for us. But in the United States, most people don't know what to do with a Daikon radish. In this video I will show you 2 simple recipes that are quite delicious. Will make a traditional Taiwanese soup with pork and daikon radishes, and we will make a Korean Daikon radish salad. The recipes are below.

Taiwanese Daikon & Pork Soup Recipe

Ingredients:
• 1.5 lbs. pork (any cut but bones are a plus)
• 1.5 lbs. daikon radish, peeled and cut into chunks
• 1 garlic clove, chopped fine
• 1 small thumb of ginger
• water to cover
• salt as needed
• cilantro for garnish

1. Boil the pork (if it has bones, don’t skip this step), then discard the water.
2. Add all ingredients, cover with fresh water, boil and cook until the daikon is fork tender.
3. Remove ginger, salt to taste and garnish with cilantro, serve with rice (optional).

Daikon Radish Salad (Musaengchae)

Ingredients:
• Half of a large Daikon radish
• 1 tbs sea salt (Kosher or pickling salt works fine)
• 1-2 Spring onions or scallions
• 2 tbs Rice vinegar,
• 2 tbs Korean hot pepper flakes
•  2 tbs sugar
• 1 clove garlic, minced
•  Roasted sesame seeds for garnish

Directions:
1. Peel the radish and cut into thin matchsticks. Place in bowl.
2. Add 1 tbs sea salt and mix it by hand. Rest for 5 minutes.
3. Rinse and drain.
4. Add minced garlic, chopped green onion, vinegar, hot pepper flakes and sugar.
5. Mix until coated well
6. Serve cold with roasted sesame seeds, very good served with rice.
