How to make kuih siput

Kuih Siput, also known as kue garpu in Indonesia, this is a very #popular traditional snack, commonly enjoyed in Malaysia, it is offered to guests during the festive seasons especially Chinese New Year or Hari Raya. To make this delightful treat, all you need is a little bit of patience. As Chinese New Year is around the corner, I'll be sharing some fantastic recipes for you to enjoy during the festivities. Stay tuned!

Recipe:
Sauté ingredients:
1 onion, sliced
3-4 garlic
2 tbsp dried shrimps, soaked
3-4 dried red chilli, soaked

Spices:
1 tbsp cumin powder
1 tbsp fennel powder
1/2 red chili powder, optional

For the dough:
450g all purpose flour
2 tbsp rice flour
120g butter, melted
50 ml water, approximately
1 tsp salt
1 egg

Other:
2-3 stalks of curry leaves
Oil for frying

Method:
1) Heat 1 tbsp oil, sauté onion, garlic and dried shrimps.

2) Blend or pound together the sauteed ingredients and dried soaked red chilli until as fine as possible. Set aside

3) In a mixing bowl add flour, rice flour, salt and melted butter. Mix until the flour is well combined with the butter.

4) Add in egg, pounded ingredients, cumin powder, fennel powder, and curry powder. (Add 1 tbsp of water at a time until you achieve the desired dough consistency).

5) Knead until it forms a pliable dough and does not stick to your hand. Cover and rest the dough for 30 minutes.

6) Pinch a small piece of dough from the larger batch, press it firmly into the patterned mold, and slide it outwards. The patterned dough will curl upwards, creating a shell shape.

7) For deep frying, cook the kuih siput over medium heat until light golden brown. Stir them so they won't stick to the bottom of the pot and they will brown more evenly too.

8) Then add the curry leaves, fry for another 1 minutes and remove from the heat. (To ensure they maintain their golden color, please remove them when they reach this stage. If cooked for too long, they might burn)

9) For baking, pre-heat the oven to 170 degree Celsius and bake the kuih siput dough for 15-20 minutes or until your desired crispiness.

10) 9) Let it cooled completely, and transfer to an air tight container.
