Hi, everyone! We love pickles here. And, we really love claussen pickles. My first 2 months of gardening season, I spend impatiently waiting for my first cucumber harvest. lol I've tried many recipes over the years, but this one is superb. Recipe: This recipe is for 10-15 pickling cucumbers. You'll need: 10-15 pickling cucumbers 1 quart tap water 1/4 cup distilled white vinegar 1 tablespoon canning salt (or sea salt) 1/4 teaspoon mustard seed 1 teaspoon black peppercorns 2 teaspoons dried or freeze dried dill 2 garlic cloves Sprinkle of red pepper flakes (for real claussen pickles) In your quart of water, add your vinegar and salt, and stir until the salt is dissolved. In your (quart) pickle jar, add the dill, garlic, mustard seed, peppercorns, rd pepper flakes, (and 1/2 teaspoon pickle crisp if you use it). Take your cucumbers and slice off both ends. This ensures your pickles won't be mushy, and that your brine won't end up cloudy. Slice your cucumbers in rounds, spears, halves, or whatever you prefer. Put all of your cucumbers in the jar, filling it to the neck of the jar, only. Then pour your brine over your cucumbers. *Do not fill to the top. Fill only to cover all of the cucumbers, leaving the neck of the jar empty. Leave your jar open (put a paper towel or coffee filter over it), or just make sure you leave the lid off slightly so that air can escape the jar. Put the jar on your counter for 24 hours. After 24 hours, leaving the lid off, put the jar into your refrigerator for another 24 hours. After that, put your lid on tight, shake the jar up well, and you have delicious pickles! The flavor will continue to get better over several days, and these pickles will last about 6 months in the fridge. **If you just want to make your own pickles but don't have a garden, you can (in many grocery stores), buy bags of pickling cucumbers in the produce department, to take home and make pickles out of.
