How to make mascarpone soufflé cake that tastes really good when eaten warm
(It is delicious even if it is aged in the refrigerator for a day and eaten cold)

*material
35 g butter
120g mascarpone
20 g milk
4 egg yolks
6 g lemon juice
1 g salt
2 g vanilla extract
40 g cake flour
15 g corn starch

125 g egg whites
85 g sugar
2 g lemon juice

*Oven temperature (based on the oven I use: Wiswell)
*Oven temperature is Celsius
180 degrees 20 minutes preheat
(After melting the butter and mascarpone, start preheating the oven)

(Total baking time 90 minutes)
(Set the time to 90 minutes from the beginning so that the oven does not turn off)
1. Set the top heated wire to 180 degrees and the bottom heated wire to 170 degrees and bake for 18 minutes
after 18 minutes
2. Set the top heated wire to 120 degrees and the bottom heated wire to 110 degrees and bake for 10 minutes
(Open and close the oven door for 30 seconds while lowering the temperature)
after 10 minutes
3. Bake for 62 minutes by setting the top heated wire to 110 degrees and the bottom heated wire to 110 degrees

*Oven temperature is based on my home oven. It can be difficult to succeed at once, so try baking several times and find the right temperature for your oven.
