This old fashioned casserole comes
This old fashioned casserole comes from Granny’s Kitchen which is from 1975. The recipe calls for Twistee noodles. I wasn’t sure exactly what that was so I used elbow macaroni. You can bake this casserole in the ring pan like the recipe suggests or you can bake it in a casserole dish and put the buttered peas and carrots on the side. Enjoy!
1 cup Twistee noodles
1 cup scalded milk
2 eggs
Salt and pepper to taste
1 cup soft breadcrumbs
½ cup buttered breadcrumbs
1 cup cheddar cheese, grated
2 TBSP pimiento, chopped
1 TBSP green pepper, chopped
2 TBSP minced onion
2 TBSP melted butter
1 cup diced ham
Rinse and drain cooked noodles. Put noodles in bowl and add ham, cheese, soft bread crumbs, onions, green pepper, pimiento, melted butter, salt and pepper to taste. Mix well. Beat eggs and slowly add to milk. Mix into noodles. Pour into well greased ring mold and sprinkle buttered breadcrumbs on top (mix the ½ cup breadcrumbs with 2 TBSP melted salted butter). Bake at 350F until set (ours baked for about 30-40 minutes). Turn out onto a large plate and fill center of ring with buttered peas and carrots (we used a little over a cup of frozen peas and carrots that were microwaved with about 2 TBSP of salted butter). Enjoy!
